{"id":6697,"date":"2013-03-13T13:10:59","date_gmt":"2013-03-13T20:10:59","guid":{"rendered":"https:\/\/www.skilletchronicles.com\/content\/?p=6697"},"modified":"2015-04-11T21:38:39","modified_gmt":"2015-04-11T21:38:39","slug":"a-soup-for-spring","status":"publish","type":"post","link":"https:\/\/www.skilletchronicles.com\/content\/a-soup-for-spring\/","title":{"rendered":"A soup for spring"},"content":{"rendered":"<p><a href=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2013\/03\/Pot-sticker-soup.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"550\" height=\"367\" class=\"aligncenter size-full wp-image-6700\" title=\"Pot sticker soup\" src=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2013\/03\/Pot-sticker-soup.jpg\" alt=\"\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Spring is a fickle season.<\/p>\n<p>One day dawns sunny and warm, spurring an appetite for tender greens in a salad.\u00a0 The next is dreary and wet, just the sort of weather for a good soup.<\/p>\n<p>Although the calendar says we still have another week of winter, the weather here in Portland has been toying with spring.\u00a0 The daffodils are blooming and the gardeners have been out in force.<\/p>\n<p>But the skies are gray today and I have soup on my mind \u2013 not a hearty, long-simmering recipe, though.\u00a0 I want something light and flavorful like this easy pot sticker soup.<\/p>\n<p>Inspired by fragrant Vietnamese <em>pho<\/em>, the recipe comes together quickly with commercial chicken broth and frozen pot stickers.\u00a0 Fresh ginger, dried shiitake mushrooms, a cinnamon stick and a couple of star anise work their magic in just half an hour.<\/p>\n<p>The broth ingredients are mostly pantry staples.\u00a0 I like\u00a0 to add fresh lemongrass which is now available at Whole Foods.\u00a0 If you don&#8217;t have it or can&#8217;t find it, though, the soup will be good anyway.\u00a0 Fish sauce is optional although it adds a depth of flavor.\u00a0 Sweet sherry, white wine or sake with a pinch of sugar can substitute for the <em>mirin<\/em>.<\/p>\n<p>For the potstickers, I like to use Ling Ling brand chicken and vegetable pot stickers that I buy at Costco.\u00a0 But any good pot stickers that aren&#8217;t loaded with artificial ingredients would work.<\/p>\n<p>Pre-washed baby spinach straight out of the bag adds color and fresh flavor with almost no effort.<\/p>\n<p>Until warm weather is here to stay, this soup will keep your spirits up.\u00a0 One whiff of its delicate aroma is enough to brighten my day.<\/p>\n<div id=\"recipe\"><strong>POT STICKER SOUP<\/strong><br \/>\n<em>Serves 4 to 6<\/em><\/p>\n<p>6 small dried shiitake mushrooms<br \/>\n6 cups chicken broth<br \/>\n6 thin slices of fresh ginger<br \/>\n2 whole star anise, smashed<br \/>\n1 stick cinnamon<br \/>\n8 peppercorns, preferably Szechuan<br \/>\n2-inch length of lemongrass<br \/>\n1-2 tablespoons of fish sauce to taste (optional)<br \/>\n3 cups fresh, pre-washed baby spinach<br \/>\n13-ounce package frozen pot stickers (or equivalent)<br \/>\nSriracha or other hot chile sauce for serving (optional)<\/p>\n<p>Place mushrooms in a small bowl and cover with boiling water to soften while you pull together the remaining ingredients.\u00a0 Pour chicken broth into a large saucepan and add ginger, spices, lemongrass and fish sauce if you&#8217;re using it.\u00a0 You could tie up the star anise, cinnamon stick and peppercorns in cheesecloth if you wish, but the small pieces will sink to the bottom and the cinnamon stick is easy to fish out before serving.<\/p>\n<p>Drain mushrooms, squeeze out excess water, and slice.\u00a0 Add sliced mushrooms to the broth. Simmer, covered, for 30 minutes.\u00a0 A few minutes before serving, stir in spinach.<\/p>\n<p>Meanwhile, bring large pot of salted water to a boil and drop in the frozen pot stickers, working in batches if necessary to keep them from clumping together. \u00a0 Boil pot stickers for 5-6 minutes.\u00a0 Remove with a slotted spoon from pot to a colander and rinse with cool water.<\/p>\n<p>To serve, place 3 or 4 pot stickers in the bottom of a soup bowl.\u00a0 Ladle out enough broth to cover, making sure to include spinach and several slices of mushrooms.\u00a0 Pass around sriracha but be forewarned:\u00a0 a couple of drops go a long way.<\/p>\n<p>Aleta Watson <\/p><\/div>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; Spring is a fickle season.
