{"id":6461,"date":"2012-11-29T15:10:43","date_gmt":"2012-11-29T22:10:43","guid":{"rendered":"https:\/\/www.skilletchronicles.com\/content\/?p=6461"},"modified":"2012-12-18T15:22:37","modified_gmt":"2012-12-18T22:22:37","slug":"ladies-andgentlemen-start-your-ovens","status":"publish","type":"post","link":"https:\/\/www.skilletchronicles.com\/content\/ladies-andgentlemen-start-your-ovens\/","title":{"rendered":"Ladies and gentlemen, start your ovens"},"content":{"rendered":"<p><a href=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2012\/11\/Tropical-fruit-bars.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"550\" height=\"350\" class=\"aligncenter size-full wp-image-6465\" title=\"Tropical fruit bars\" src=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2012\/11\/Tropical-fruit-bars.jpg\" alt=\"\" \/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Let the baking begin!<\/p>\n<p>Even people who use their ovens to store pots and pans most of the year, start pulling out their mixers and baking sheets about now.\u00a0 It&#8217;s cookie time and we&#8217;re lucky that an early Thanksgiving gave us a little extra time to fill our freezers with homemade treats for the holidays.<\/p>\n<p>I&#8217;m a self-confessed cookie addict.\u00a0 When I just checked, I found 14 cookie recipes posted here in the four years I&#8217;ve been writing this blog.\u00a0 Still, I&#8217;m always on the lookout for simple offerings that deliver irresistible flavor without a lot of fuss, especially during such a busy season.<\/p>\n<p>Bar cookies are one of the best bets.\u00a0 You spread them in the pan, bake, and slice when cooled.\u00a0 No rolling, no cutting, no decorating.<!--more--><\/p>\n<p>They&#8217;re the perfect candidate to fill out a holiday cookie platter.\u00a0 I&#8217;m so enamored of the bar concept that I posted this gooey, <a href=\"https:\/\/www.skilletchronicles.com\/content\/holiday-cookies-recipe\/\" target=\"_blank\">over-the-top chocolate and dried cherry rendition<\/a> in 2010.<\/p>\n<p>This year, I&#8217;m hoping to bring a little taste of the tropics to the wet and chilly Pacific Northwest with these fruit and nut bars. Loaded with dried pineapple, macadamias and coconut, they combine the chewy and crunchy textures I love with the bright flavor of pineapple and the subtle spice of brown sugar.<\/p>\n<p>They&#8217;re based loosely on the chocolate and walnut Congo Bars in Margaret Fox&#8217;s classic &#8220;Cafe Beaujolais&#8221; cookbook (Ten Speed Press, 1984).\u00a0\u00a0 An unconscionable amount of dark brown sugar gives them a wonderfully moist, chewy character. I&#8217;ve introduced whole wheat pastry flour \u2013\u00a0 currently my favorite basic baking ingredient \u2013 as well as the pineapple, macadamias and coconut flakes.<\/p>\n<p>You don&#8217;t really need to use a mixer to make these cookies, they&#8217;re so foolproof.\u00a0 But I always do.<\/p>\n<p>The only challenge here is to avoid eating all the cookies before the holiday parties begin.\u00a0 You could freeze them.\u00a0 Or just whip up another batch when you need them.\u00a0 They&#8217;re that easy.<\/p>\n<div id=\"recipe\"><strong>TROPICAL FRUIT BARS<\/strong><br \/>\n<em>Makes 36 bars<\/em>1 3\/4 cups all-purpose flour<br \/>\n1 cup whole wheat pastry flour<br \/>\n2 1\/2 teaspoons baking powder<br \/>\n1\/2 teaspoon salt<br \/>\n2\/3 cup unsalted butter, melted and cooled<br \/>\n2 1\/4 cups dark brown sugar<br \/>\n3 large eggs<br \/>\n1\u00a0 cup chopped dried pineapple<br \/>\n3\/4 cup macadamia nuts, roughly chopped<br \/>\n1\/2 cup coconut<\/p>\n<p>Preheat oven to 325 degrees. Line 10-by-15-inch rimmed cookie sheet with heavy duty aluminum foil, leaving a tail at each end for easy lifting. Butter generously.<\/p>\n<p>In a small bowl, stir together flour, baking powder and salt with a wire whisk. In large bowl, cream together butter, brown sugar and eggs until well blended. Stir flour mixture into butter mixture until thoroughly incorporated.<\/p>\n<p>Spread dough evenly on bottom of prepared cookie sheet. Scatter even layers of pineapple, macadamias and coconut over dough and press in lightly.<\/p>\n<p>Bake for 30-35 minutes, until lightly browned. Remove from oven and cool on wire rack.
