\/><\/a><\/p>\n<p>&nbsp;<\/p>\n<p>Ordinarily, I don&#8217;t put much effort into breakfast.\u00a0 I start the day with whole grain toast, peanut butter and jam more often than not.<\/p>\n<p>When we&#8217;re car camping, however, it&#8217;s another story.\u00a0 I&#8217;m ready for a real breakfast when hiking, paddling or just hanging around the campfire are on the day&#8217;s agenda.\u00a0 And nothing delights the whole family more than blueberry pancakes with butter and maple syrup.<!--more--><\/p>\n<p>Pancakes from a boxed mix just won&#8217;t do.\u00a0 Somehow they always taste too much of baking powder and one glance at the ingredient list gives me the willies.<\/p>\n<p>So I usually stir together the dry ingredients at home and transport them to camp in a zippered plastic bag.\u00a0 Add eggs, water, and oil and you have light pancakes with enough whole grains to make me feel good about feeding them to little ones.\u00a0 The blueberries, an Oregon staple, are added at the stove.<\/p>\n<p><a href=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2012\/08\/pancakes3.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"550\" height=\"360\" class=\"aligncenter size-full wp-image-6161\" title=\"pancakes3\" src=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2012\/08\/pancakes3.jpg\" alt=\"\" \/><\/a><\/p>\n<p>These pancakes start with a standard recipe from Mark Bittman&#8217;s <a href=\"http:\/\/www.amazon.com\/How-Cook-Everything-Simple-Recipes\/dp\/0471789186\/ref=sr_1_3?s=books&amp;ie=UTF8&amp;qid=1345825767&amp;sr=1-3&amp;keywords=how+to+cook+everything\">&#8220;How to Cook Everything,&#8221;<\/a> (Wiley, 1998).\u00a0 I scale it up and convert it to a mix by adding whole wheat pastry flour, <a href=\"http:\/\/sacofoods.com\/products\/view\/cultured-buttermilk\" target=\"_blank\">buttermilk powder<\/a> (available in the baking aisle at major markets), and a little baking soda.\u00a0 At camp, I add extra virgin olive oil instead of melted butter and the results are terrific.\u00a0 The oil is rich and buttery, unlike the ubiquitous canola oil, and the flavor is not a distraction\u2013particularly when you add blueberries and maple syrup.\u00a0\u00a0 What&#8217;s not to like?<\/p>\n<p>They were a hit last weekend at Cold Water Cove on Clear Lake in the Cascade Mountains.<\/p>\n<p>Of course, you could make them at home, too, but it wouldn&#8217;t be as much fun.\u00a0 And I&#8217;m not sure they would taste quite as good.<\/p>\n<p><a href=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2012\/08\/pancakes4.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"550\" height=\"352\" class=\"aligncenter size-full wp-image-6162\" title=\"pancakes4\" src=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2012\/08\/pancakes4.jpg\" alt=\"\" \/><\/a><\/p>\n<div id=\"recipe\"><strong>BUTTERMILK BLUEBERRY PANCAKES<\/strong><br \/>\n<em>Serves 6 generously<\/em>2 cups all-purpose flour<br \/>\n1 cup whole wheat pastry flour<br \/>\n3\/4 teaspoons salt<br \/>\n1 tablespoon brown sugar<br \/>\n3\/4 teaspoon baking soda<br \/>\n1\/2 cup plus 1 tablespoon dried buttermilk<br \/>\n2 eggs<br \/>\n3 tablespoons extra virgin olive oil<br \/>\n2 1\/2 cups water<br \/>\n1 pint fresh blueberries<br \/>\nButter and maple syrup for servingAt home, combine flours, salt, sugar, baking soda and dried buttermilk.\u00a0 Package in a zippered plastic bag or other sealed container for transport.<\/p>\n<p>At camp, pour dry mix into a medium bowl.\u00a0 In a separate bowl, beat egg and oil together, then stir in water. \u00a0 Make a well in the center of the dry ingredients and pour the liquid mixture into it.\u00a0 Stir gently, just until the flour has been absorbed.\u00a0 Add a little more water if necessary to thin the batter to a pourable consistency.\u00a0 Don&#8217;t worry about getting out all the lumps.<\/p>\n<p>Heat a griddle or heavy skillet over medium high heat, adjusting as needed when you begin to cooking so the pancakes brown evenly and cook all the way through.\u00a0 Pour batter by spoonfuls onto the hot griddle or skillet.\u00a0 Scatter 4 or 5 blueberries on the surface and cook until bubbles surface on the batter and the edges begin to look dry.\u00a0\u00a0 Using a spatula, lift an edge of the pancake to be sure it&#8217;s browned to your liking and then flip it over to cook the other side.\u00a0 Remove when pancake is lightly browned on the bottom.<\/p>\n<p>Serve with butter and maple
