The mere thought of spending much time working over a hot stove has been downright depressing.<\/p>\n<p>These are the days when all I want is salad for supper.<\/p>\n<p>Fortunately, I had all the ingredients on hand tonight for a recipe that I&#8217;ve been developing in tribute to my new hometown.<!--more--><\/p>\n<p>This salad calls for sweet, juicy peaches from nearby orchards and crunchy hazelnuts, which must be Portland&#8217;s\u00a0 official nut given how often I encounter them in baked goods here. I toss them with peppery arugula, a little bacon for savor and a bit of goat cheese for creamy texture and refreshing tang.\u00a0 Spinach works, too, for less adventurous palates.<\/p>\n<p>Most of the ingredients came from the Hollywood Farmers Market.\u00a0 That&#8217;s Hollywood as in cool Portland neighborhood, not the Hollywood of movie fame.<\/p>\n<p><a href=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2012\/08\/Peach-and-arugula-salad-2.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-6111\" title=\"Peach and arugula salad 2\" src=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2012\/08\/Peach-and-arugula-salad-2.jpg\" alt=\"\" width=\"330\" height=\"258\" \/><\/a>This salad does require a little stove time, but if you keep the heat down, you only have to stir the bacon occasionally as it browns.\u00a0 The hazelnuts are roasted briefly in a toaster oven on the far side of the kitchen.<\/p>\n<p>With all its textures and bright flavors, this is just the salad for summer&#8217;s hottest evenings.<\/p>\n<div id=\"recipe\"><strong>A SALAD FOR PORTLAND<\/strong><br \/>\n<em>Serve 4 as an entree, 8 as a side dish<\/em>1\/2 cup raw hazelnuts<br \/>\n1 medium shallot, minced<br \/>\n2 tablespoons red wine vinegar<br \/>\n6 tablespoons extra virgin olive oil<br \/>\n4 slices bacon<br \/>\n2 large peaches<br \/>\n6 cups washed arugula<br \/>\n3 ounces fresh goat cheese<br \/>\nSalt and pepper to taste<\/p>\n<p>Toast hazelnuts in a metal baking pan in a 300 degree oven for about 5 minutes\u2013just long enough for the skin to blister and start to peel.\u00a0 Watch them carefully since they burn easily.\u00a0\u00a0 Wrap hot nuts in a clean dishtowel and rub them together until most of the skin is scraped off.\u00a0 Chop the peeled nuts roughly and discard the skin.\u00a0 Set aside.<\/p>\n<p>In a small bowl, whisk together the shallot, vinegar and olive oil for the salad dressing.\u00a0 Set aside.<\/p>\n<p>Cut bacon slices in half lengthwise, then crosswise in thick slices.\u00a0 Cook in a skillet over medium heat until bacon is brown and crisp.\u00a0 Drain bacon pieces on a dish lined with paper towels.<\/p>\n<p>While bacon is cooking, peel peaches, cut into quarters and remove the pits.\u00a0 Slice the quarters crosswise into 1\/2-inch slices.\u00a0 Cut goat cheese into small chunks.<\/p>\n<p>Place arugula in a large salad bowl.\u00a0 Add peaches, hazelnuts, bacon, and goat cheese and toss.\u00a0 Drizzle dressing over salad and toss again or pass dressing separately.\u00a0 Serve immediately on chilled plates.<\/p>\n<p><em>Aleta Watson<\/em><\/p>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>It&#8217;s been so hot around here recently that I haven&#8217;t really felt like a big meal.
