{"id":5962,"date":"2012-06-07T09:32:42","date_gmt":"2012-06-07T16:32:42","guid":{"rendered":"https:\/\/www.skilletchronicles.com\/content\/?p=5962"},"modified":"2012-06-08T09:40:30","modified_gmt":"2012-06-08T16:40:30","slug":"cupcakes-worth-remembering","status":"publish","type":"post","link":"https:\/\/www.skilletchronicles.com\/content\/cupcakes-worth-remembering\/","title":{"rendered":"Cupcakes worth remembering"},"content":{"rendered":"<p><a href=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2012\/06\/Black-bottom-cupcakes.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"550\" height=\"410\" class=\"aligncenter size-full wp-image-5963\" title=\"Black bottom cupcakes\" src=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2012\/06\/Black-bottom-cupcakes.jpg\" alt=\"\" \/><\/a><\/p>\n<p>Chocolate, cheesecake and cupcakes.\u00a0 What&#8217;s not to like?<\/p>\n<p>Amid all the change in my life right now, it&#8217;s comforting to return to old favorites.\u00a0 I had almost forgotten about these fabulous, moist black bottom cupcakes until I needed something easy to fill out the menu at a children&#8217;s birthday party last month.<\/p>\n<p>We were afraid the birthday cake wouldn&#8217;t go far enough, so I whipped up a few dozen of these backups\u2013no frosting required.\u00a0 All the children headed for the red cake with the Captain America shield on top.\u00a0 The smart adults gravitated toward these little treats with the cheesecake and chocolate chip centers.<\/p>\n<p>At one point, these cupcakes were the staple of every potluck at my old paper.\u00a0 That&#8217;s where I snagged the recipe that was floating around the newsroom.<\/p>\n<p>Baked in silver foil and arranged in a pyramid with flowers, they served as one of my best friend&#8217;s wedding cake.\u00a0 Several of us baked dozens of the cupcakes over a period of weeks and stashed them in the freezer until the big day. They went fast.<\/p>\n<p>Perhaps the nicest thing about these little cakes is you can stir them together without any special equipment.\u00a0 A bowl, a measuring cup and spoons, and a wooden spoon are all you need. There&#8217;s no need to cream butter and, although it&#8217;s helpful to sift together the dry ingredients, it&#8217;s not absolutely necessary.<\/p>\n<p>Cocoa is the secret to the dark chocolate flavor of the cake batter.\u00a0 I use Valrhona if I have it on hand, but Hershey&#8217;s will do fine.\u00a0 There&#8217;s so much flavor going on, most eaters will miss the subtleties anyway.<\/p>\n<p>Plop a couple of tablespoons of the cake mixture into muffin tins lined with paper cups, top each with a heaping teaspoon of the cream cheese and chocolate chip mixture and push them into the oven.\u00a0 When they&#8217;re done, so are you.\u00a0 Frosting would be way over the top.<\/p>\n<p>These cupcakes are so moist, they keep well.\u00a0 There are still a few stashed in the freezer.\u00a0 I&#8217;d better grab one before they all disappear.<\/p>\n<div id=\"recipe\"><strong>BLACK BOTTOM CUPCAKES<\/strong><br \/>\n<em>Makes about 18 cupcakes<\/em>8 ounces cream cheese<br \/>\n1 egg<br \/>\n1 1\/3 cup sugar, divided use<br \/>\nSalt<br \/>\n12 ounces chocolate chips<br \/>\n1 1\/2 cups flour<br \/>\n1\/4 cup cocoa<br \/>\n1 teaspoon soda<br \/>\n1 cup water<br \/>\n1\/3 vegetable oil<br \/>\n1 tablespoon white vinegar<br \/>\n1 teaspoon vanillaPreheat oven to 350 degrees and line about line 2 or 3 muffin tins with paper cup.\u00a0 You&#8217;ll be making about 18 cupcakes.<\/p>\n<p>In a medium bowl, beat cheese, egg, 1\/3 cup of the sugar and salt together until well blended.\u00a0 Stir in the chocolate chips.<\/p>\n<p>In another medium bowl, sift or whisk together the flour, 1 cup of sugar, cocoa, soda and salt.<\/p>\n<p>In a small bowl or 2 cup measure, stir together the water, cooking oil, vinegar and vanilla.\u00a0 Pour the liquid mixture into the flour mixture and stir well until the flour is completely absorbed. Fill each muffin cup about 1\/3 full with the chocolate batter.\u00a0 Drop a generously heaped teaspoon of the cream cheese mixture into the center of each cup.\u00a0 If you have some leftover when all the cups have been filled, divide the remaining batter among the cups, just making sure the batter doesn&#8217;t begin to overflow the liners.<\/p>\n<p>Bake for about 30 minutes, or until the chocolate portion of the cupcakes springs back when you touch it lightly.<\/p>\n<p>These cupcakes only get better when stored overnight in an airtight container and freeze very well.<\/p>\n<p><em>Aleta Watson<\/em><\/p>\n<\/div>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Chocolate, cheesecake and cupcakes.\u00a0 What&#8217;s not to like?
