{"id":5402,"date":"2012-01-05T12:58:17","date_gmt":"2012-01-05T19:58:17","guid":{"rendered":"https:\/\/www.skilletchronicles.com\/content\/?p=5402"},"modified":"2012-01-11T18:23:55","modified_gmt":"2012-01-12T01:23:55","slug":"pea-soup-is-the-answer","status":"publish","type":"post","link":"https:\/\/www.skilletchronicles.com\/content\/pea-soup-is-the-answer\/","title":{"rendered":"Pea soup is the answer"},"content":{"rendered":"<p><a href=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2012\/01\/Pea-soup.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"550\" height=\"408\" class=\"aligncenter size-full wp-image-5404\" title=\"Pea soup\" src=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2012\/01\/Pea-soup.jpg\" alt=\"\" \/><\/a><\/p>\n<p>After the excesses of the holidays, all I want to eat right now is simple, nutritious food.\u00a0 I loved all those cookies, extravagant meals and festive cocktails \u2013 far too much, I&#8217;m afraid.\u00a0 My body needs a break.<\/p>\n<p>If you feel the same way, I&#8217;ve got a soup for you.\u00a0 This split pea soup takes just minutes to put together and only a little more time to cook, thanks to the pressure cooker.\u00a0 You could cook it in a regular pot, too, although it will take a little longer to cook the peas until tender and require careful watching to avoid scorching.<!--more--><\/p>\n<p>Leave out the ham hock and you have a terrific vegetarian version.\u00a0 Just be sure to look for bright green split peas for the best flavor.<\/p>\n<p>I&#8217;ve been using my <a href=\"http:\/\/www.amazon.com\/Fagor-Splendid-6-Quart-Pressure-Cooker\/dp\/B0000717AU\" target=\"_blank\">Fagor pressure cooker <\/a>a lot more in recent weeks because I wanted to show a visiting relative how easy and safe it is.\u00a0 Modern pressure cookers are designed to avoid the hazards of pea soup on the ceiling associated with the old style cookers, which would blow their weights and the contents of the cooker if something wasn&#8217;t quite right.<\/p>\n<p>The only real risk now is burning yourself with hot steam if you&#8217;re not cautious when removing the lid.\u00a0 This soup doesn&#8217;t even require that precaution since you let the pressure fall naturally with the lid still locked in place.<\/p>\n<p>I like to puree the finished soup to achieve the velvety texture that always drew us to Andersen&#8217;s Pea Soup restaurant in Buellton when we used to travel up and down Highway 101 a couple of times a year to visit my mother-in-law in Southern California.<\/p>\n<p>If you&#8217;re feeling ambitious, you can set out little bowls of croutons, crumbled bacon, shredded cheddar and chopped green onions as garnishes.\u00a0 I&#8217;m happy with a little of the smoky, salty ham hock.<\/p>\n<p>Savory and quick are all I want this week.\u00a0 Oh yes, and a minimum of dishes to wash.<\/p>\n<div id=\"recipe\"><strong>SPLIT PEA SOUP IN A HURRY<\/strong><em><br \/>\nServes 6-8<\/em><\/p>\n<div>1 tablespoon olive oil<br \/>\n1 medium onion, chopped<br \/>\n2 medium carrots, chopped<br \/>\n1 stalk celery, chopped<br \/>\n2 cloves garlic, smashed<br \/>\n1 bushy sprig fresh thyme<br \/>\n1 teaspoon sea salt or more to taste<br \/>\n2 bay leaves<br \/>\n1 ham hock (about 1 pound)<br \/>\n1 pound dried split peas<br \/>\n8 cups water<br \/>\nFreshly ground black pepperCombine all ingredients but pepper in 6-quart or larger pressure cooker.\u00a0 Lock lid in place and heat on high until cooker reaches high pressure.\u00a0 (In modern cookers, a colorful pin usually pops up and a steady stream of steam comes out of the pressure valve.)\u00a0 Lower heat just enough to maintain high pressure and a gentle whisper of steam.\u00a0 Cook for 10 minutes.<\/p>\n<p>Remove cooker from heat and let pressure drop naturally.\u00a0 When pressure has dropped, carefully remove lid, angling cooker away from you to allow any remaining steam to escape safely.<\/p>\n<p>The soup is terrific at this point.\u00a0 For creamiest texture, however, remove ham hock and transfer soup to blender or food processor and whirl until smooth.\u00a0 You may need to work in batches.\u00a0 An immersion blender also does the trick.
