{"id":5194,"date":"2011-11-15T11:37:00","date_gmt":"2011-11-15T18:37:00","guid":{"rendered":"https:\/\/www.skilletchronicles.com\/content\/?p=5194"},"modified":"2011-11-22T10:20:10","modified_gmt":"2011-11-22T17:20:10","slug":"cranberries-with-zip","status":"publish","type":"post","link":"https:\/\/www.skilletchronicles.com\/content\/cranberries-with-zip\/","title":{"rendered":"Cranberries with zip"},"content":{"rendered":"<p><a href=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2011\/11\/cranberrysalsa2.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"550\" height=\"401\" class=\"aligncenter size-full wp-image-5203\" title=\"cranberrysalsa2\" src=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2011\/11\/cranberrysalsa2.jpg\" alt=\"\" \/><\/a><\/p>\n<p>I know I&#8217;m taking a risk here.\u00a0 Many a Thanksgiving dinner guest insists that the only true cranberry sauce comes out of a can in a jiggly cylinder, ridges and all.\u00a0 Even those who prefer homemade sauce expect a sweet dish.<\/p>\n<p>But I say there&#8217;s just way too much sugar on the menu for Turkey Day.\u00a0\u00a0 Something bright and savory would be a much better counterpoint to the mild bird and all those carbs.<\/p>\n<p>This year, I&#8217;m offering cranberry salsa as an alternative to the desserts masquerading as side dishes.<\/p>\n<p>It&#8217;s a sassy, festive dish designed to perk up appetites overwhelmed by so many sweet offerings. Chopped ginger, chile, onions and red peppers bring lively flavor and subtle heat to the familiar fruit.\u00a0 And there&#8217;s still a bit of sugar to take the edge off the berries&#8217; tart bite.<!--more--><\/p>\n<p>Adding to its appeal, this dish comes together quickly in a food processor and tastes even better if it&#8217;s made a day ahead.<\/p>\n<p>Obviously, switching this salsa for the usual sauce probably isn&#8217;t a good idea if your family clings to every tradition. But you might try putting it on the table, too, to shake things up a bit.<\/p>\n<p>At the very least, try this salsa with leftovers.\u00a0 Turkey sandwiches will never be the same.<\/p>\n<div id=\"recipe\"><strong>CRANBERRY SALSA<\/strong><br \/>\n<em>Makes 4-5 cups<\/em>\u00bd cup red onion, roughly chopped<br \/>\n\u00bd -1 small jalape\u00c3\u00b1o chile, seeded, depending on your taste<br \/>\n\u00bd cup red bell pepper, roughly chopped<br \/>\n1 tablespoon minced ginger<br \/>\n1 small unpeeled orange, cut into large chunks<br \/>\n3 cups (12 ounce bag) fresh cranberries, rinsed and sorted<br \/>\n3-4 tablespoons sugar, to taste<br \/>\n\u00bd cup cilantro, torn<br \/>\n\u00bd teaspoon salt, or more to taste<\/p>\n<p>In a food processor fitted with a steel blade, whirl together the onion, chile, bell pepper, ginger and orange until finely minced.\u00a0 Add cranberries and sugar and pulse 5 or 6 times.\u00a0 Add cilantro and pulse a couple of times to make a coarse salsa.\u00a0 Transfer mixture to a medium bowl, cover tightly with plastic wrap and refrigerate until about half an hour before serving.<\/p>\n<p><em>Aleta Watson<\/em><\/p>\n<\/div>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I know I&#8217;m taking a risk here.\u00a0 Many a Thanksgiving dinner guest insists that the only true cranberry sauce comes out of a can in a jiggly cylinder, ridges and all.\u00a0 Even those who prefer homemade sauce expect a sweet dish.
