{"id":4881,"date":"2011-08-24T12:40:27","date_gmt":"2011-08-24T19:40:27","guid":{"rendered":"https:\/\/www.skilletchronicles.com\/content\/?p=4881"},"modified":"2011-08-24T12:43:58","modified_gmt":"2011-08-24T19:43:58","slug":"ice-pops-with-a-kick","status":"publish","type":"post","link":"https:\/\/www.skilletchronicles.com\/content\/ice-pops-with-a-kick\/","title":{"rendered":"Ice pops with a kick"},"content":{"rendered":"<p><a href=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2011\/08\/Adultsicles.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"550\" height=\"343\" class=\"aligncenter size-full wp-image-4882\" title=\"Adultsicles\" src=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2011\/08\/Adultsicles.jpg\" alt=\"\" \/><\/a><\/p>\n<p>The way this summer has gone, it looked like there never was going to be a good time to try out my idea for adult versions of the commercial (and trademarked) Popsicle.\u00a0 But the weather seems to have settled into a nice run of warm days at last and I&#8217;ve been experimenting with making ice pops with a kick.<\/p>\n<p>These frozen bars are milder versions of a couple of refreshing summer cocktails made with fresh juice.\u00a0 It took a little tweaking to get the flavor right while reducing the alcohol enough that the pops would freeze.\u00a0 They&#8217;re supposed to be fun, not seriously intoxicating, anyway.<\/p>\n<p>For my models, I drew on Lynchburg Lemonade, named after the Kentucky home of the Jack Daniels distillery, and a generic peach daiquiri recipe.\u00a0 I substituted lemon juice and homemade simple syrup for sour mix in the potent lemonade recipe and stuck to fresh peaches rather than &#8220;peach-flavored&#8221; liqueurs in the daiquiri.<\/p>\n<p>The results are fresh tasting and fruity\u2013with just enough liquor to make the flavors more interesting.<\/p>\n<p>These are easy to whirl together in the blender and freeze in the ice pops molds readily available in most cookware stores these days.\u00a0 Let them freeze overnight and you&#8217;re ready for an impromptu party, complete with frozen drinks.<\/p>\n<div id=\"recipe\"><strong>KENTUCKY LEMONADE ICE POPS RECIPE<\/strong><br \/>\n<em>Makes 6-8<\/em>&nbsp;<\/p>\n<p>\u00be cup sugar<br \/>\n\u00be cup water<br \/>\n1 cup freshly squeezed lemon juice<br \/>\n1 ounce Jack Daniels whiskey<br \/>\n\u00bd ounce triple sec<br \/>\nJuice of 1 tangerine<\/p>\n<p>In a small pan, bring sugar and water to a boil.\u00a0 Let boil 5 minutes, then set aside to cool.<\/p>\n<p>Place sugar syrup, lemon juice, whiskey, triple sec and tangerine juice into a blender and whirl together until well mixed.\u00a0 Pour mixture into ice pop molds, leaving about \u00bd -inch of headroom to allow pops to expand as they freeze.\u00a0 Insert wooden sticks immediately if the molds have tops. Or wait about 30 minutes after placing in the freezer until the pops become slushy enough for the sticks to stand up straight.\u00a0\u00a0 Let freeze overnight.<\/p>\n<p>When ready to serve, run warm water over the molds just until the ice pops release.<\/p>\n<p><strong>PEACH DAIQUIRI ICE POPS RECIPE<\/strong><br \/>\n<em>Makes 8<\/em><\/p>\n<p>3 peaches, peeled, pitted and cut into large chunks<br \/>\n2 ounces dark rum<br \/>\n1 ounce triple sec<br \/>\n2-3 tablespoons of sugar<br \/>\nJuice of 1 lime<\/p>\n<p>Whirl all ingredients together in a blender and pour mixture into ice pop molds, leaving about &amp;frad12 inch of headroom to allow the pops to expand as they freeze.<\/p>\n<p>Insert wooden sticks immediately if the molds have tops.
