{"id":4214,"date":"2011-01-31T15:13:10","date_gmt":"2011-01-31T22:13:10","guid":{"rendered":"https:\/\/www.skilletchronicles.com\/content\/?p=4214"},"modified":"2011-01-31T15:13:10","modified_gmt":"2011-01-31T22:13:10","slug":"slow-cooker-turkey-chili-recipe","status":"publish","type":"post","link":"https:\/\/www.skilletchronicles.com\/content\/slow-cooker-turkey-chili-recipe\/","title":{"rendered":"Slow cooker chili talks turkey"},"content":{"rendered":"<p><a href=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2011\/01\/Turkey-chili-in-bowl.jpg\"><img loading=\"lazy\" decoding=\"async\" width=\"550\" height=\"367\" class=\"aligncenter size-full wp-image-4215\" title=\"Turkey chili in bowl\" src=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2011\/01\/Turkey-chili-in-bowl.jpg\" alt=\"\" \/><\/a><\/p>\n<p>Whether you&#8217;ve been hiking in the woods or just sprawled on the couch watching the big game, a hot bowl of chili is always welcome on a crisp winter day.\u00a0 If it&#8217;s spent all day bubbling away in a slow cooker while you were playing, all the better.<\/p>\n<p>In preparation for Super Bowl Sunday, I&#8217;ve been working on a slow cooker chili recipe for the last couple of\u00a0 weeks.\u00a0 We&#8217;ve eaten more chili than I would recommend, but the end result is a deeply flavorful stew of home-cooked beans, lively spice and savory turkey.\u00a0 It&#8217;s hearty enough to satisfy the most devoted chili head, yet still low in fat if you don&#8217;t pile on the condiments.<!--more--><\/p>\n<p>I realize there are plenty of chili recipes in circulation already that can be thrown together and left to simmer for hours in a slow cooker.\u00a0 Most are pretty basic, though, and I wanted a chili that tasted like I had tended it all day.\u00a0 To pump up the flavor, I use pure ground chile, cumin, coriander, Mexican oregano and a pinch of cinnamon along with a touch of cocoa at the end.\u00a0 Inexpensive turkey legs and thighs take the place of the usual ground meat.<\/p>\n<p>Beans add nutrition, fiber and lovely background for the vibrant spices.\u00a0 Although you could use canned beans instead, I don&#8217;t like their spongy texture or salty flavor. I cook my own the day before and freeze the leftovers for a later meal.<\/p>\n<p>Since the chili must cook for 8-10 hours, you may want to assemble the  ingredients in the crock insert the night before and chill the whole  thing in the fridge.\u00a0 The next morning, pop it in the cooker and turn it  on.\u00a0 The chili will only take about half an hour longer to cook and  you&#8217;ll be free for the day.<\/p>\n<p>Although I find the slow cooker useful, I don&#8217;t use it all the time.\u00a0 So I had a couple of things to learn during the course of developing this recipe.<\/p>\n<p>Number one:\u00a0 Don&#8217;t expect a 4-quart cooker to brew up a big batch of chili.\u00a0 By the time I had added all the ingredients I thought I needed for this recipe, my old cooker was almost overflowing and the turkey took far longer than expected to cook through.\u00a0 If I had read the instruction book, I would have known you shouldn&#8217;t fill the crock more than 3\/4 full.<\/p>\n<p><a href=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2011\/01\/chili.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-4221\" title=\"chili\" src=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2011\/01\/chili.jpg\" alt=\"\" width=\"330\" height=\"248\" \/><\/a>I went shopping for a new cooker.\u00a0 The one I bought, the 6 1\/2-quart<a href=\"http:\/\/www.amazon.com\/Crock-Pot-SCVT650-PS-2-Quart-Programmable-Stainless\/dp\/B001KVZTFO\/ref=sr_1_1?ie=UTF8&amp;s=home-garden&amp;qid=1296498408&amp;sr=1-1&amp;tag=theskilchro-20\" target=\"_blank\"> Crock Pot Touch Screen<\/a> model, received top marks from <a href=\"http:\/\/www.cooksillustrated.com\/equipment\/overview.asp?docid=25818\" target=\"_blank\">Cook&#8217;s Illustrated<\/a> and I was impressed with how much better it performed.\u00a0 The temperature stayed steady at about 200 degrees once the cooker brought the chili up to &#8220;low.&#8221;\u00a0 Although it&#8217;s significantly more expensive than many cookers on the market, I liked the fact that you can program it to cook for up to 20 hours on high.\u00a0 When the cooking time is up, it automatically shifts to the warm setting for up to six hours.<\/p>\n<p>Number two: Watch your liquids.\u00a0 Because a slow cooker is a closed environment, liquid does not evaporate during the course of cooking.\u00a0 In fact, more liquid is drawn out of the vegetables and meats.\u00a0 That makes a tasty broth, but not if you&#8217;ve added too much liquid in the first place.\u00a0 My second batch was watery and dull because I didn&#8217;t drain the beans or tomatoes at the beginning.<\/p>\n<p>The third try was the charm.\u00a0 This chili was thick and meaty, sweet with tomatoes and ripe peppers and spiced with enough ground chile to tickle the tongue without searing the palate.\u00a0 Add more chile if you crave heat.<\/p>\n<div id=\"recipe\"><strong>SLOW COOKER TURKEY CHILI RECIPE<\/strong><br \/>\n<em>Serves 8<\/em><\/p>\n<p>3 pounds fresh turkey legs or thighs, on bone, with skin<br \/>\nKosher salt and freshly ground black peppers<br \/>\n3 tablespoons extra virgin olive oil, divided use<br \/>\n2 onions, chopped<br \/>\n4-6 garlic cloves, to taste, chopped<br \/>\n2 medium red bell peppers, chopped<br \/>\n2 medium yellow bell peppers, chopped<br \/>\n2 jalape\u00c3\u00b1o peppers, minced<br \/>\n1 stalk celery, chopped<br \/>\n3 tablespoons pure chile powder (<em>ancho<\/em> preferred)<br \/>\n1 teaspoon <em>chipotle<\/em> chile powder (optional)<br \/>\n1 tablespoon cumin<br \/>\n1 tablespoon dried oregano, preferably Mexican<br \/>\n2 teaspoons ground coriander seed<br \/>\n\u00bc teaspoon cinnamon<br \/>\n\u00bd teaspoon cayenne pepper<br \/>\n4 cups cooked pink or kidney beans, drained (<em>See recipe below<\/em>)<br \/>\n2 28-ounce cans chopped tomatoes, drained<br \/>\n3 tablespoons finely ground corn meal (optional)<br \/>\n1 tablespoon unsweetened cocoa powder<br \/>\nCrushed red pepper flakes<\/p>\n<p>GARNISHES:<br \/>\nGrated cheddar cheese<br \/>\nMinced red onion<br \/>\nChopped fresh cilantro<br \/>\nDiced avocado<br \/>\nSour cream<\/p>\n<p>Rinse turkey legs and thighs with cool water, pat dry with paper towels and sprinkle with salt and pepper. Warm 2 tablespoons olive oil over medium heat in a large skillet and saut\u00c3\u00a9 turkey parts until brown on all sides. Remove turkey from pan, draining excess fat, and set aside.\u00a0 In the same skillet, add 1 tablespoon olive oil and saut\u00c3\u00a9 onions, garlic, bell peppers, jalape\u00c3\u00b1o and celery until soft, 3-5 minutes.<\/p>\n<p>Place drained beans in slow cooker.\u00a0 Add vegetables, stir in chile powders, cumin, oregano, ground coriander, paprika, cayenne and cinnamon. Lay turkey parts atop the beans, saut\u00c3\u00a9ed vegetables and spices. Pour drained tomatoes over all and sprinkle with 1\u00bd teaspoons salt.\u00a0 Cover and cook on <strong>low<\/strong> for 8-10 hours. Half an hour before the cooking time has elapsed, stir in the corn meal, which thickens the chili a little and adds body.<\/p>\n<p>When turkey is cooked through and ready to fall off the bone, remove from slow cooker and discard skin and bones.\u00a0 Shred the meat and return to the cooker.\u00a0 Sprinkle in cocoa, stir and check for seasonings.\u00a0 Add more salt if necessary and crushed red pepper flakes to taste.<\/p>\n<p>Serve in soup bowls, passing around the cheese, cilantro, onion, avocado and sour cream for diners to add as desired.<\/p>\n<p><strong>BEANS:<\/strong><br \/>\n<em>Makes about 8 cups<\/em><\/p>\n<p>1 pound dried pink beans<br \/>\n1 onion, chopped<br \/>\n4 cloves garlic, chopped<br \/>\n6 cups chicken broth<\/p>\n<p>Cover beans in cold water by about 2 inches and let soak overnight. (Or use quick soak method and place the beans and water in a saucepan, bring to a boil for two minutes, cover, remove from heat and let stand 1 hour.)\u00a0 Drain beans and place in medium or large slow cooker.\u00a0 Add onion, garlic and chicken broth.
