I always found it hard to step away from the bowl.<\/p>\n<p>Today, I won&#8217;t touch the stuff.\u00a0 All those fake flavors and dehydrated ingredients no longer appeal.\u00a0 But I still love a good crunchy chip and a tasty dip.<\/p>\n<p>So once or twice a year, I make onion dip from scratch, slowly caramelizing the onions until they turn soft and sweet.\u00a0 It takes more work, it&#8217;s true, but the flavor is so much better.\u00a0 And if it still isn&#8217;t good for me, I tell myself it&#8217;s a rare indulgence.<!--more--><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-full wp-image-2673\" title=\"onion dip-hand1\" src=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2010\/02\/onion-dip-hand1.jpg\" alt=\"onion dip-hand1\" width=\"264\" height=\"376\" srcset=\"https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2010\/02\/onion-dip-hand1.jpg 550w, https:\/\/www.skilletchronicles.com\/content\/wp-content\/uploads\/2010\/02\/onion-dip-hand1-420x600.jpg 420w\" sizes=\"auto, (max-width: 264px) 100vw, 264px\" \/>Super Bowl Sunday, arguably the biggest snack day of the year, is the perfect occasion for this splurge. I always like the food better than the game anyway.<\/p>\n<p>The recipe comes from Ina Garten&#8217;s first book, &#8220;The Barefoot Contessa Cookbook&#8221; (Clarkson Potter, 1999).\u00a0 Like most of her recipes, it doesn&#8217;t stint on the fat. but that&#8217;s why her food always tastes so good.\u00a0 I&#8217;ve substituted reduced fat cream cheese and yogurt for the regular cream cheese and sour cream of the original at times and the flavor was still terrific.\u00a0 But it&#8217;s hard to beat the original.<\/p>\n<p>The key here is to brown the onions for at least 20 minutes over medium-low heat until they turn golden brown and amazingly sweet.\u00a0 They don&#8217;t need to be stirred constantly, but you don&#8217;t want to neglect them so much that they begin to crisp on the edges. A heavy skillet makes the job easier.<\/p>\n<p>One bite of this dip and you&#8217;ll turn up your nose at the mix, too.<\/p>\n<div id=\"recipe\"><strong>Pan-fried Onion Dip<\/strong><br \/>\n<em>Makes 2 cups<\/em><\/p>\n<p>2 large yellow onions<br \/>\n\u00bc cup (\u00bd stick) unsalted butter<br \/>\n\u00bc cup vegetable oil<br \/>\n\u00bc &#8211; \u00bd teaspoon ground cayenne pepper, to taste<br \/>\n1 teaspoon kosher salt<br \/>\n\u00bd teaspoon freshly ground black pepper<br \/>\n4 ounces cream cheese, at room temperature<br \/>\n\u00bd cup sour cream<br \/>\n\u00bd cup good mayonnaise<\/p>\n<p>Cut onions in quarters vertically from the root end and then slice into 1\/8-inch thick quarter rounds.\u00a0 (You will have about 3 cups.)\u00a0 Heat butter and oil in a large saute pan over medium heat.\u00a0 Add onions, cayenne, salt and pepper and saute 10 minutes.\u00a0 Reduce heat to medium-low and cook, stirring occasionally, 20 more minutes, until onions are browned and caramelized.\u00a0 Allow onions to cool.<\/p>\n<p>Place cream cheese, sour cream and mayonnaise in bowl of electric mixer fitted with paddle attachment and beat until smooth.
